This Cajun sausage and rice skillet is a one-pan meal bursting with bold spices, tender rice, and smoky sausage. Perfect for a quick, hearty dinner!

  • 1 lb smoked sausage, sliced
  • 1 cup long-grain white rice
  • 1 ½ cups chicken broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tsp Cajun seasoning
  • ½ tsp smoked paprika
  • ½ tsp salt (adjust to taste)
  • ¼ tsp black pepper
  • 2 tbsp olive oil
  • 2 green onions, sliced (for garnish)

Instructions

  • Heat olive oil in a large skillet over medium heat. Add sliced sausage and cook until browned. Remove and set aside.
  • In the same skillet, sauté onion and bell pepper until softened. Add garlic and cook for another 30 seconds.
  • Stir in rice, Cajun seasoning, paprika, salt, and black pepper. Toast rice for 1-2 minutes.
  • Pour in chicken broth and diced tomatoes (with juices). Stir well.
  • Bring to a simmer, cover, and cook for 18-20 minutes until rice is tender.
  • Return sausage to the skillet, stir, and cook for another 2-3 minutes.
  • Garnish with green onions and serve hot.
