Ingredients

Scale
  • 1 2/3 cups + 1 tbsp all-purpose flour
  • 2 1/2 tsp pumpkin spice
  • 1 tsp baking soda
  • 1/2 tsp fine sea salt
  • 1 cup cold unsalted butter
  • 2/3 cup Libby's pumpkin puree (room temperature)
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar (packed)
  • 2 large egg yolks (room temperature)
  • 2 tsp vanilla extract
  • 1 cup finely chopped chocolate bar or chocolate chips

Instructions

  • Preheat the oven and prepare your baking sheets.
  • Combine dry ingredients: flour, pumpkin spice, baking soda, and salt in a bowl.
  • Brown the cold butter in a pan, then cool slightly.
  • In a separate bowl, mix pumpkin puree, both sugars, and vanilla extract.
  • Stir in egg yolks until smooth.
  • Gradually mix in the dry ingredients.
  • Fold in chopped chocolate or chocolate chips.
  • Chill dough, then scoop and bake until golden.

Notes

Blot the pumpkin puree to remove excess moisture for the perfect chewy texture. Browned butter enhances the cookies' flavor, making them irresistibly delicious.
