  • 12 oz penne pasta
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1/4 cup vodka
  • 1 cup heavy cream
  • 1 cup canned crushed tomatoes
  • 1/2 tsp red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 1/2 cup grated Parmesan cheese
  • Fresh basil, for garnish

Instructions

  • Cook the pasta in salted boiling water until al dente. Reserve 1 cup of pasta water before draining.
  • Heat olive oil in a large skillet over medium heat. Add garlic and onion; sauté until fragrant and soft.
  • Pour in the vodka and simmer for 2-3 minutes until slightly reduced.
  • Stir in the crushed tomatoes and cook for 5 minutes.
  • Lower the heat and mix in the heavy cream, red pepper flakes, salt, and pepper.
  • Add the cooked pasta to the skillet and toss to coat. Add reserved pasta water as needed for a creamy consistency.
  • Sprinkle with Parmesan cheese and fresh basil before serving.

Notes

  • For extra protein, add grilled chicken or shrimp.
  • Substitute heavy cream with coconut milk for a dairy-free option.
  • Adjust red pepper flakes for desired spice level.
