1 lb beef sirloin or tenderloin, thinly sliced
1 tbsp olive oil
2 tbsp unsalted butter
1 medium onion, diced
2 garlic cloves, minced
8 oz cremini or white mushrooms, sliced
1 tbsp all-purpose flour
1 1/2 cups beef broth
1 tbsp Worcestershire sauce
1/2 cup sour cream
Salt and pepper to taste
Fresh parsley for garnish (optional)
Egg noodles or rice for serving
Instructions
Heat olive oil in a large skillet over medium-high heat. Sear the beef slices until browned on both sides. Remove and set aside.
Add butter to the skillet. Sauté onions and garlic until softened. Add mushrooms and cook until tender.
Stir in the flour and cook for 1 minute. Gradually pour in the beef broth, stirring constantly to avoid lumps.
Add Worcestershire sauce and bring to a simmer. Let the sauce thicken for 2-3 minutes.
Reduce heat to low and stir in sour cream. Return the beef to the skillet and cook for another 2-3 minutes. Season with salt and pepper.
Serve over cooked egg noodles or rice and garnish with fresh parsley if desired.
Notes
For extra flavor, use beef broth with low sodium and adjust salt to taste.
Do not boil the sauce after adding sour cream to prevent curdling.
