This Easy Beef Stroganoff Recipe is a classic comfort food dish made with juicy beef, savory mushrooms, and a creamy sour cream sauce. Perfect for a quick, hearty dinner!

  • 1 lb beef sirloin or tenderloin, thinly sliced
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 8 oz cremini or white mushrooms, sliced
  • 1 tbsp all-purpose flour
  • 1 1/2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)
  • Egg noodles or rice for serving

Instructions

  • Heat olive oil in a large skillet over medium-high heat. Sear the beef slices until browned on both sides. Remove and set aside.
  • Add butter to the skillet. Sauté onions and garlic until softened. Add mushrooms and cook until tender.
  • Stir in the flour and cook for 1 minute. Gradually pour in the beef broth, stirring constantly to avoid lumps.
  • Add Worcestershire sauce and bring to a simmer. Let the sauce thicken for 2-3 minutes.
  • Reduce heat to low and stir in sour cream. Return the beef to the skillet and cook for another 2-3 minutes. Season with salt and pepper.
  • Serve over cooked egg noodles or rice and garnish with fresh parsley if desired.

Notes

  • For extra flavor, use beef broth with low sodium and adjust salt to taste.
  • Do not boil the sauce after adding sour cream to prevent curdling.
  • Add a pinch of paprika for a smoky flavor.
