  • 4 chicken thighs
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 carrots, sliced
  • 1 leek, chopped
  • 1 cup chicken stock
  • 1 cup white wine
  • 1/2 cup heavy cream
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste
  • Fresh thyme sprigs

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. Season chicken thighs with salt and pepper.
  3. Heat olive oil in a large oven-safe pot over medium heat. Brown the chicken thighs on both sides, then remove and set aside.
  4. In the same pot, sauté onion, garlic, carrots, and leeks until soft.
  5. Stir in mustard, white wine, and chicken stock. Bring to a simmer.
  6. Return the chicken to the pot and cover. Transfer to the oven and bake for 40 minutes.
  7. Stir in cream, cook for an additional 10 minutes.
  8. Garnish with fresh thyme and serve hot.

Notes

  • For a thicker sauce, add a tablespoon of flour to the vegetables while sautéing.
  • Serve with mashed potatoes or crusty bread.
