  • 12 oz (340g) pasta of choice (spaghetti, fettuccine, or penne)
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 garlic cloves, minced
  • 8 oz (225g) mushrooms, sliced
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  • Cook pasta according to package instructions. Reserve 1/2 cup of pasta water, then drain and set aside.
  • Heat olive oil and butter in a large skillet over medium heat.
  • Add minced garlic and cook until fragrant (about 1 minute).
  • Stir in mushrooms and cook until tender, about 6–8 minutes.
  • Pour in heavy cream and bring to a simmer. Add Parmesan cheese, salt, and pepper, stirring until smooth.
  • Toss in cooked pasta, adding reserved pasta water to adjust the sauce's consistency if needed.
  • Garnish with fresh parsley and serve immediately.
