Ingredients

  • 1 small head green cabbage, finely chopped

  • 1 cucumber, diced

  • 4 green onions, sliced

  • 1 ripe avocado

  • 1 cup fresh basil leaves

  • 1 cup fresh spinach

  • 1/4 cup fresh chives

  • 1/4 cup olive oil

  • 2 tablespoons lemon juice

  • 2 tablespoons rice vinegar

  • 1 clove garlic

  • 1/4 cup nutritional yeast or grated parmesan

  • Salt and pepper to taste

Instructions

  • In a large bowl, combine chopped cabbage, cucumber, and green onions.

  • In a blender, add avocado, basil, spinach, chives, olive oil, lemon juice, rice vinegar, garlic, and nutritional yeast. Blend until smooth.

  • Pour the dressing over the salad and mix well.

  • Season with salt and pepper to taste.

 

  • Serve immediately or chill for 30 minutes for enhanced flavor.

Notes

  • You can substitute nutritional yeast with parmesan for a non-vegan version.

  • Add protein like grilled chicken or tofu to make it a full meal.
