  • 1 pie crust (baked)
  • 3-4 ripe bananas
  • 1 cup sugar
  • 1/4 cup cornstarch
  • 1/4 tsp salt
  • 2 1/2 cups milk
  • 3 egg yolks
  • 2 tbsp butter
  • 1 tsp vanilla extract
  • Whipped cream for topping

Instructions

  • Bake the pie crust and let it cool.
  • In a saucepan, combine sugar, cornstarch, and salt. Gradually add milk, cooking over medium heat until thick.
  • Whisk egg yolks in a small bowl, then slowly add some of the hot mixture into the yolks, stirring constantly. Return everything to the saucepan and cook for 2 more minutes.
  • Remove from heat and stir in butter and vanilla extract. Let cool slightly.
  • Layer banana slices in the pie crust. Pour the custard over the bananas.
  • Chill in the refrigerator for at least 4 hours.
  • Top with whipped cream before serving.
