  • 1 green bell pepper, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 lb smoked sausage, sliced
  • 1 tsp smoked paprika
  • 1 tsp thyme
  • 2 bay leaves
  • 1/2 tsp cayenne pepper (optional)
  • 6 cups chicken or vegetable broth
  • Salt and black pepper, to taste
  • 4 cups cooked white rice
  • Green onions, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion, bell pepper, and celery until softened, about 5 minutes.
  2. Add garlic and smoked sausage, cooking for 2-3 minutes until fragrant.
  3. Stir in smoked paprika, thyme, bay leaves, and cayenne pepper (if using).
  4. Add soaked red beans and broth to the pot. Bring to a boil, then reduce heat and simmer for 1.5-2 hours until beans are tender.
  5. Season with salt and black pepper to taste.
  6. Serve over cooked white rice and garnish with chopped green onions.

Notes
