This Mozzarella Stuffed Meatloaf recipe combines tender ground meat, Italian spices, and gooey mozzarella for a comforting and satisfying dish.

  • 2 lbs ground beef
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1/2 cup milk
  • 1 cup shredded mozzarella cheese (for stuffing)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 1/4 cup ketchup (plus extra for topping)
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  • Preheat oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper.
  • In a large bowl, mix ground beef, breadcrumbs, eggs, milk, Parmesan cheese, parsley, onion, garlic, Italian seasoning, salt, and pepper.
  • Spread half the meat mixture into the loaf pan, creating a small well in the center.
  • Add shredded mozzarella cheese into the well, then cover with the remaining meat mixture, sealing the edges.
  • Spread ketchup over the top for a glaze.
  • Bake for 50-60 minutes or until the internal temperature reaches 160°F (70°C).
  • Let the meatloaf rest for 10 minutes before slicing.

Notes

  • Use freshly shredded mozzarella for the best melt.
  • Add a dash of Worcestershire sauce for extra depth of flavor.
  • Serve with mashed potatoes or steamed veggies for a complete meal.
