4 boneless, skinless chicken breasts
1 cup uncooked white rice
2 cups chicken broth
1 cup heavy cream
1 cup grated Parmesan cheese
3 garlic cloves, minced
1 tablespoon olive oil
1 teaspoon Italian seasoning
Salt and pepper, to taste
1 cup fresh spinach (optional)
2 tablespoons fresh parsley, chopped
Instructions
Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt, pepper, and Italian seasoning. Sear chicken for 4-5 minutes on each side until golden brown, then set aside.
In the same skillet, sauté garlic for 1 minute until fragrant. Add rice, chicken broth, and heavy cream. Stir to combine.
Bring to a simmer, then reduce heat to low. Cover and cook for 15 minutes, stirring occasionally, until the rice is tender.
Stir in Parmesan cheese and spinach (if using). Return chicken to the skillet, spoon sauce over the top, and let cook for another 5 minutes until chicken is cooked through.
