  • 4 boneless, skinless chicken breasts
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 3 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 1 cup fresh spinach (optional)
  • 2 tablespoons fresh parsley, chopped

Instructions

  • Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt, pepper, and Italian seasoning. Sear chicken for 4-5 minutes on each side until golden brown, then set aside.
  • In the same skillet, sauté garlic for 1 minute until fragrant. Add rice, chicken broth, and heavy cream. Stir to combine.
  • Bring to a simmer, then reduce heat to low. Cover and cook for 15 minutes, stirring occasionally, until the rice is tender.
  • Stir in Parmesan cheese and spinach (if using). Return chicken to the skillet, spoon sauce over the top, and let cook for another 5 minutes until chicken is cooked through.
  • Garnish with parsley and serve warm.
