  • 2 tbsp olive oil
  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 2 tsp Cajun seasoning
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 8 oz penne pasta
  • 1 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet or pot over medium heat. Add chicken pieces, season with Cajun seasoning, and cook until browned. Remove and set aside.
  2. In the same pot, add bell peppers and garlic, sauté for 2–3 minutes until softened.
  3. Pour in chicken broth, heavy cream, and uncooked pasta. Stir well and bring to a boil.
  4. Reduce heat, cover, and simmer for 10–12 minutes, stirring occasionally until pasta is tender.
  5. Stir in Parmesan cheese and cooked chicken. Adjust seasoning with salt and pepper.
  6. Garnish with fresh parsley and serve hot.
