Ingredients
Scale
1 cup cornmeal
1/2 cup all-purpose flour
1/4 cup granulated sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup buttermilk
1/4 cup unsalted butter, melted
2 tbsp honey
1 large egg
1/2 cup whole milk
Vegetable oil (for frying)
Instructions
In a mixing bowl, whisk together cornmeal, flour, sugar, baking powder, baking soda, and salt.
In a separate bowl, whisk buttermilk, melted butter, honey, egg, and milk until smooth.
Gradually combine the wet and dry ingredients, stirring until well mixed.
Heat vegetable oil in a deep pan over medium heat to 350°F (175°C).
Using a small cookie scoop or spoon, drop batter into hot oil. Fry in batches until golden brown, about 2-3 minutes per side.
Remove and drain on paper towels.
Serve warm with extra honey butter for dipping.
Notes
Use a thermometer to maintain oil temperature for even frying.
For a spicier twist, add a pinch of cayenne pepper.
Can be baked at 375°F (190°C) for 12-15 minutes instead of frying.
