Ingredients

Scale
  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup buttermilk
  • 1/4 cup unsalted butter, melted
  • 2 tbsp honey
  • 1 large egg
  • 1/2 cup whole milk

  • Vegetable oil (for frying)

Instructions

  • In a mixing bowl, whisk together cornmeal, flour, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, whisk buttermilk, melted butter, honey, egg, and milk until smooth.
  • Gradually combine the wet and dry ingredients, stirring until well mixed.
  • Heat vegetable oil in a deep pan over medium heat to 350°F (175°C).
  • Using a small cookie scoop or spoon, drop batter into hot oil. Fry in batches until golden brown, about 2-3 minutes per side.
  • Remove and drain on paper towels.

  • Serve warm with extra honey butter for dipping.

Notes

  • Use a thermometer to maintain oil temperature for even frying.
  • For a spicier twist, add a pinch of cayenne pepper.

  • Can be baked at 375°F (190°C) for 12-15 minutes instead of frying.
