1 cup fresh strawberries, diced
8 oz cream cheese, softened
1/2 cup granulated sugar
1 tsp vanilla extract
1 egg
1 cup heavy cream
1/2 cup powdered sugar
1 cup all-purpose flour
1/2 cup butter, melted
1/2 tsp baking powder
1/4 tsp salt
1/2 cup milk
1/2 cup crushed shortbread cookies
Instructions
Preheat oven to 350°F (175°C). Grease a baking sheet.
In a bowl, beat cream cheese, granulated sugar, and vanilla until smooth.
Add the egg and mix until combined.
In another bowl, whisk flour, baking powder, and salt. Gradually mix in milk and melted butter to form a batter.
Spread batter onto the baking sheet evenly and bake for 10–12 minutes until set.
Let the cake cool slightly, then spread the cheesecake mixture evenly.
Sprinkle diced strawberries over the cheesecake filling.
Gently roll the cake into a log and chill for 1 hour.
Whip heavy cream with powdered sugar until stiff peaks form. Spread over the roll.
Top with crushed shortbread cookies and extra strawberries. Slice and serve.
Notes
Use fresh, ripe strawberries for the best flavor.
Chilling the roll helps it set and makes slicing easier.
