These Sweet Strawberry Shortcake Cheesecake Rolls are a delightful fusion of creamy cheesecake filling, fresh strawberries, and soft cake, topped with a sweet crumble. Perfect for any occasion!

  • 1 cup fresh strawberries, diced
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 egg
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 cup all-purpose flour
  • 1/2 cup butter, melted
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1/2 cup crushed shortbread cookies

Instructions

  • Preheat oven to 350°F (175°C). Grease a baking sheet.
  • In a bowl, beat cream cheese, granulated sugar, and vanilla until smooth.
  • Add the egg and mix until combined.
  • In another bowl, whisk flour, baking powder, and salt. Gradually mix in milk and melted butter to form a batter.
  • Spread batter onto the baking sheet evenly and bake for 10–12 minutes until set.
  • Let the cake cool slightly, then spread the cheesecake mixture evenly.
  • Sprinkle diced strawberries over the cheesecake filling.
  • Gently roll the cake into a log and chill for 1 hour.
  • Whip heavy cream with powdered sugar until stiff peaks form. Spread over the roll.
  • Top with crushed shortbread cookies and extra strawberries. Slice and serve.

Notes

  • Use fresh, ripe strawberries for the best flavor.
  • Chilling the roll helps it set and makes slicing easier.
  • Can be stored in the refrigerator for up to 3 days.
