  • 4 large russet potatoes, washed and diced
  • 1 lb ground beef (or ground turkey)
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1/2 cup salsa
  • 1/4 cup sour cream
  • 1 avocado, diced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  • Preheat oven to 425°F (220°C). Toss diced potatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until crispy.
  • In a skillet, cook ground beef over medium heat until browned. Drain excess fat and mix in taco seasoning according to package instructions.
