  • 1 lb boneless, skinless chicken breasts, sliced into strips
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 large onion, sliced
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Juice of 1 lime
  • Warm tortillas (for serving)

Instructions

  1. In a small bowl, mix chili powder, smoked paprika, cumin, garlic powder, onion powder, salt, and pepper.
  2. In a large bowl, combine the chicken strips with 1 tablespoon of olive oil and half of the seasoning mix. Toss to coat evenly.
  3. Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-6 minutes, or until fully cooked. Remove and set aside.
  4. In the same skillet, add the sliced peppers and onions. Sprinkle the remaining seasoning mix over the vegetables. Sauté for 5-7 minutes, or until softened and slightly charred.
  5. Return the cooked chicken to the skillet, and toss everything together. Squeeze fresh lime juice over the fajitas.
  6. Serve warm with tortillas and your favorite toppings, such as sour cream, guacamole, or salsa.

  • Marinate the chicken for extra flavor by letting it sit with the seasoning mix for 30 minutes before cooking.
