  • 1 teaspoon cornstarch
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup (170g) unsalted butter, softened
  • 1 cup + 2 Tablespoons (225g) granulated sugar
  • 1 large egg, room temperature
  • 1/4 cup (60ml) fresh or bottled lemon juice
  • 1 Tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 3 Tablespoons (35g) granulated sugar (for rolling, optional)
  • 1 cup (120g) confectioners' sugar

Instructions

  • Preheat oven to 350°F (177°C). Line baking sheets with parchment paper.
  • In a medium bowl, whisk together flour, cornstarch, baking soda, and salt. Set aside.
  • Cream the butter and granulated sugar until light and fluffy. Beat in the egg, lemon juice, lemon zest, and vanilla extract.
  • Gradually add the dry ingredients, mixing until just combined.
  • Roll dough into balls. Optional: roll each ball in granulated sugar, then in confectioners' sugar.
  • Place on prepared baking sheets and bake for 10-12 minutes. Let cool before serving.
